Is it bad to leave my eBike battery on the charger or at 100%?

Both put low-level stress on the cells over time. The BMS stops charging once the pack is full, so occasional overnight charging is unlikely to cause immediate damage. That said, leaving it plugged in for days or storing it at 100% for extended periods is harder on the cells than unplugging once charging is done. Keeping storage charge around 60% is a better long-term habit.

How should I store my battery for winter?

Bring it indoors at 40% to 60% charge, in a space that stays between 50°F and 70°F (10°C to 21°C). Check the level every four to six weeks and top it up if it drops below 30%. Never store it fully empty.

Do I need to fully discharge the battery occasionally?

No. That applies to older nickel-cadmium batteries, not lithium-ion. Regular full discharges accelerate wear. Keeping the charge between 20% and 80% for everyday use is the better approach.
